This fried red snapper with patacones is a traditional Panamanian dish that is very satisfying. Patacones are made of green plantains. You can very easily get addicted to them as they taste just super good! And of course, it’s complimented with Balboa beer.

In Panama they use bijao leaves to wrap the filling before boiling. You can get different fillings, most consist of a savory cornmeal masa and a meat filling of pork or chicken as well as olives, raisins and other goodies. These ones are with chicken.
